in Provence with the Wells

For several weeks each year Patricia and Walter Wells open their 18th-century Provençal home for personalized cooking classes for a small number of participants eager to share in the food, wine, and culture of one of France's most blessed regions. Students cook with herbs, salads and vegetables from the garden, grapes from the vineyard, and olives from the groves. They sip homemade aperitifs from the orchards, and prepare roast meat and poultry in the wood oven fired with vine clippings from the vineyard. The house wine is Clos Chanteduc, the fruity, fragrant red Côtes-du-Rhône from the property. The five-day English language program includes hands-on cooking sessions led by Patricia and Walter, as well as their guided visits to markets, vineyards, shops, and local restaurants.

I created a delicious LOW CARB, Gluten Free, Sugar-Free LASAGNA made with Almond Flour Crepes Fidget For Fitness' Lasagna (Feel free to make this receipe, but if you are going to re-post it anywhere, please give Fidget For Fitness the proper credit for its copyright. Thank You) 1 Aluminum 8 x 11 Lasagna pan 12 -14 Almond Flour Crepes (recipe below) 2 lbs. Ground Sirloin 3-4 cups of spaghetti sauce (Homemade! No jar sauce allowed) 3 15 oz tubs (or one large 48 oz. tub) of Polly-O ORIGINAL Ricotta Cheese DRAINED for at least 8 hours (Do not use the Part-Skim or Old Fashioned Ricotta, it MUST be ORIGNIAL) 16 oz. Polly-O WHOLE MILK Mozzarella (do not use Part-Skim, it must be Whole Milk) Shredded ½ c. freshly grated Locatelli Pecorino Romano Cheese for the layers 3 T. of Locatelli Pecorino Romano Cheese for the top 1 egg Handful of chopped parsley leaves, no stems 1 tsp. salt ¼ tsp. fresh ground black pepper Olive Oil or Olive Oil Pam Cooking Spray 1. Drain Ricotta cheese by putting all the cheese in a large strainer with small holes (not a colander) over a bowl and cover with plastic wrap. Drain for at least 8 hours, turning it over several times with a spoon or spatula during draining time. 2. In large skillet, brown meat; drain. 3. Heat oven to 350°F. 4. In large bowl, stir together drained ricotta cheese, 14 oz. mozzarella cheese (saving some for the top), Locatelli cheese, egg, parsley, salt and pepper. 5. TATER TOT EXPLOSION You need... -- 1/2 pckg. of Tater Tots -- 1/2 cup of milk -- 1/2 pckg. of cheddar cheese (or any kind you like) -- 6-8 eggs -- 1/2 pckg. cubed ham (or any meat/veggie you like) -- Small amount of chopped raw onion -- Several dollops of butter Arrange tater tots and ham in 8x12 pan (ungreased). How to prepare your ingredients before stir frying: 1. Soak 5 dried shitake mushrooms in warm water for a few hours until they become soft. Squeeze the water out of them and slice thinly. 2. Slice a package of white mushrooms (2 cups' worth). 3. Cut a carrot into thin matchstick-shaped pieces 5 cm long. 4. Cut 7 -8 green onions into 7 cm long pieces. 5. Slice one onion thinly. 6. Slice 150 grams of beef into thin strips. Now let's start! 1. Boil 2 bunches of noodles in boiling water in a big pot for about 3 minutes. Betty's Macaroni and Cheese Deluxe

In this video, Betty demonstrates how to make her Macaroni and Cheese Deluxe. This is one of several versions of Macaroni and Cheese that you will find in bettyskitchen. This version is especially tasty, with the sauce made of cottage cheese, sour cream, cheddar cheese, eggs, and seasonings. It is my son-in-law's favorite of all of my Macaroni and Cheese recipes! Ingredients: 8-oz. package elbow macaroni, uncooked 2 cups cottage cheese (small curd) 8-oz. carton sour cream 1 egg, well beaten ½ to ¾ teaspoon salt (I used ¾ teaspoon salt in the video, and thought it would have been better with a little less.) dash of ground black pepper 2cups shredded sharp Cheddar cheese cooking oil spray (for baking dish) paprika, optional (for topping) Cook 8-oz. macaroni, according to package instructions. (I added 1 teaspoon salt to the boiling water.) Drain macaroni when done. In the meantime, combine 2 cups cottage cheese, an 8-oz. carton sour cream, 1 well-beaten egg, ½ to ¾ teaspoon salt, a dash of black pepper, and 2 cups shredded sharp Cheddar cheese in a large bowl. Add cooked and drained macaroni to cheese sauce and stir mixture until well-combined. Spoon macaroni mixture into a 9-inch by 12-inch by 2-inch baking dish, which has been sprayed with cooking oil spray. Sprinkle with paprika, if desired. Bake at 350 for 35 to 45 minutes, or until bubbly and beginning to brown. Serve immediately! Yum! I hope you enjoy this recipe! --Betty 

The show was produced by Jerry Smith of Pinewood Television in Jacksonville, Florida where I was living from 1991 to 1998. My co-host on the show was Lisa Valdini with whom I worked on several unrelated projects. All In Good Taste was a beautifully produced program in which the food was the star... obviously before the explosion of personality-based cooking shows. I´m in Iquitos, a city in the far north-east of the country, in the heart of the Peruvian Amazon. It´s the largest city in the world that can´t be reached by road. In fact the only road out of town goes to a smaller town called Nauta, and you can´t get anywhere else from there by road either. If you want to come to Iquitos, you have to take a riverboat for several days, or fly, as I did. I first arrived here a little over a week ago, and it felt like an adventure from the minute the plane landed. This place is unlike any other city I´ve visited so far. The first thing that hits you is that it is HOT. Think Darwin in the build-up but much worse. The other thing you notice is the noise. Instead of cars, almost everyone rides motorcycles or takes motocarros (tuk-tuks). I´m guessing it´s easier to ship bikes than cars and buses, although there are a few of both. The streets are teeming with motorbikes, and my guide tells me there are about 50000 motocarros in Iquitos (population 400000). You can imagine the noise all those little engines make! My cousin Gianluca and his girlfriend Manuela have lived here for around 5 years (both come from Matera down south, which I visited in May). Since I last saw them unfortunately Manuela´s father has died. He had had cancer for some time but seemed to be getting a bit better when I visited them, but regressed again soon after. Manuela´s mother is also visiting when I arrive and we spend an afternoon looking through the old quarter of town. Rimini comprises the old town (which was founded around 300BC) and surrounding new town, and a coastal resort comprising kilometres of lidos, bars, restaurants, nightclubs, etc. A lot of conferences, exhibitions, conventions, etc are held there and there is a university so many young people come here to study and work. It´s most famous son (at least to modern people) is Federico Fellini, and the area where he was born and raised has naive-type pictures painted on the outside walls of many houses. Paella de marisco ( seafood paella ) recipe

Let's prepare together the paella the marisco, the famous rice and shellfish dish from Spain world wide known. *** Hi Giallozafferano's friends, how many of you have ever eaten or heard about the paella? Well, today we'll be preparing it together. The paella is a rice-based single course typical of Spain, which takes its name from the frying pan used to cook and serve it. It can be prepared with several ingredients, and today we'll make the paella de marisco, or shellfish paella. But let's see together what ingredients we'll need: • 8 king prawns • 4 scampi • 1 lb (500 g) of mussels • 1 lb (500 g) of squids • 2 sachets of powdered saffron • 1 tsp of sweet paprika • ½ tsp of chili pepper • 5 cups (1,2 lt) of fish stock • Just under 1 cup (200 ml) of tomato puree • 2 cloves of garlic • 10 tbsp of extra virgin olive oil • 1 big onion • 14 oz (400 g) of rice (Arborio or Japonica) Well, let's prepare together the paella de marisco: In this frying pan I've put the mussels, well cleaned, I've covered with a lid and I've let them open on a high flame. Once they are open, drain them and keep the cooking liquid to cook the rice. Subtract the weight of the mussel water from the weight of the fish stock and substitute in order to obtain the same total amount of liquid for cooking the rice, that is 5 cups (1,2 lt). RAW HORSE MEAT FOR LUNCH IN FRANCE

Several horse breeds are produced in France as food and are not ridden nor worked. Horse milk is also sold here. I can ship it, powdered, anywhere in the world. (The milk, not the meat!) It is known for its healing qualities and was sold in French pharmacies as a medical product until fairly recently. I cured myself of liver cancer in early 2008, and horse milk was part of my recovery. This meal was actually big enough for three adults, but I tend to cook a little extra sometimes, depending on my meal plans, and save and use the leftovers. The cost of this meal was about five euros. A second meal will be produced using the leftovers. We eat meat on days when my spouse works -- he does manual labor. Otherwise, we go meatless. Even when I went to grad school nights, worked in Wall Street fulltime AND had a part-time job, I reserved two hours every Sunday afternoon for cooking for the week. If you cannot cook daily from scratch, you might consider adding someone to your household who CAN. Many French people grew up in one-room farmhouses with big fireplaces, and all life took place in that one room. The beds were squashed behind low dividing screens, often of wood or frosted glass. I dumped the greywater and topped up the fresh water. Left 0830, using TomTom we went via a Vons/Safeway for groceries, got fuel at an Amco filling station $2.63 a gallon compared to the $2.76 at Shell directly opposite and then north on I99 for a good while. Turned off at Visalia heading east, as the RV is over 22ft we decided not to risk the Three Rivers entrance to the parks and come in on the 180 Generals Highway. On the Interstate we had good radio reception and several dozen stations to choose from (mainly KGFM I think it was from Bakersfield with all tunes from 70s-now). When we were in Death Valley, or as we passed through the hills round Lake Isabella, we got very poor radio reception - except from God Botherers or Country (or on one a God Bothering Country station!). It seems no matter where you go, you will ALWAYS pick up one station telling you how great God is in a modern pop way, or another about how his horse has died and his wife has run away with a cattle rustler. They just seem to have the strongest signals. Can you imagine the Free Presbyterians of the Western Isles at home ...

We had opted for just the four of us - Janine, Gary (uk), Bart (Belgium) and myself which was a wise choice as we were about to spend many hours bumping along and the cars who had six people in them looked a little like an uncomfortable sardine can. We had also opted to leave from Tupiza rather than Uyuni as it meant we had a little extra scenery to enjoy and our fifth day was added on to the usual trip to hike one of the old volcanoes that lies at the edge of the salt flats! The days involved alot of driving as there was so much to see. We had heard many stories about **** companies with vehicles that break down all the time and rubbish food...but we were lucky, all went pretty smoothly with a few minor stops to check something engine related and we were on our way usually in a few minutes. We travelled again through such varied landscapes with mountains, active and inactive volcanoes and very sparse and harsh, desolate areas.....lots of desert. She received her bachelor's degree in photography and psychology from Southern Illinois University and her master's degree in nonprofit management and leadership from Grand Valley State University. Brown worked for a year as a presidential photographer in the Jimmy Carter White House before running a successful photography business for ten years. In 1988, she began volunteering to lead teams annually to northern Mexico to build homes for impoverished families, a service she has repeated every summer since. In 1993, Brown became the founding executive director of Love INC, which collaborated with local social agencies and churches to serve the working poor. In 1998, Brown became the director of missions at Bella Vista Church. It was during her missions to the Middle East and the Third World that she became keenly aware of the plight of women in these countries. In January 2006, she formed SowHope. And the amounts of each that you should be consuming daily based on your individual needs and fitness goals. In part 2 I'm going to outline some practical ways that you can fit a healthy eating plan into your busy lifestyle. The whole idea of eating 6 well-balanced meals per day is by no means a new concept. Most of you who are reading this already have a good idea of how you should be eating. But for the majority of people the main excuse is they don't have the time to eat properly. But this is just not the case. Eating a "junk-food" diet probably takes just as much or more time then it does to eat a healthy diet. At lunch time getting in your car and heading on over to the fast food joint, waiting in line at the drive through, and then heading back to work takes a lot more time then if you had your food prepared in advance and ready to eat. The key to successfully following a healthy bodybuilding nutrition program is planning ahead. When you cook your food always prepare for several meals. It doesn't take any more time to cook larger quantities of food then it does to cook smaller amounts of food for just one meal. Purposely plan to have left overs that you can re-heat in the microwave, this saves time and makes it easier to have quick nutritious meals on hand.
